Appellation: 1er cru of the Côte de Beaune, in the Côte D’Or
Location
At the heart of the Côte des Blancs, between Chassagne and Puligny, right next to Montrachet, Saint-Aubin is a wine-producing village in the south of the Côte de Beaune. The Village appellation includes some twenty Premiers Crus divided into several groups. The hamlet of Gamay may be where the name of the grape variety comes from. Rooted in the rock, its 13th-century fortress is reminiscent of the sap that rises under the bark of time. The Appellation has been recognised since 1937.
The Terroir
White soils of clay with a high limestone content for the white wines. The slopes are sometimes steep, oriented East or South-East. The altitude varies between 300 and 350 metres.

Its nobility and distinction come from a subtle balance between an elegant freshness and a luscious richness, without excess, giving it a very smooth mouthfeel. With its personality, it is the perfect complement for firm fish, or steamed or grilled shellfish. It also goes well with poultry fillets with a firm texture. Serve at: 12 - 14°C.
CHARACTERISTICS OF THE WINE
Saint-Aubin whites are the colour of sunbeams, ranging across the spectrum of golden hues depending on the vineyard and the vintage. Young, it presents a combination of white flower, flint, green almond and orange blossom notes. With age, it develops rich notes of beeswax and honey, almond paste, amber, cinnamon. It is a firm, tender wine, a little sharp when young, then becoming full-bodied and complete, of great nobility.
