Pernand-Vergelesses "Les Combottes"
- Appellation
- Pernand-Vergelesses "Les Combottes"
- Region
- Village Appellatio : Côte de Beaune, in the Côte D’Or
- Location
- Nestled where two valleys meet, Pernand-Vergelesses is located in the heights of Côte de Beaune. Here the "Montagne de Corton" shelters a superb wine-making area covering three villages - Pernand-Vergelesses, Aloxe-Corton and Ladoix-Serrigny - that share a single passion and produce great wines such as the two prestigious Grand Crus: Corton (red wines) and Corton-Charlemagne (white wines). Set on the hillside Pernand, with its sloping streets, always presents a smiling face. It is also a great cultural centre: this was the home of Jacques Copeau (1879-1949), a great figure involved in the renewal of the French theatre (RRF, Vieux Colombier in Paris) and architect of one of the first "decentralisations" of drama in the 1920s, and where he began the Copiaus adventure (many great actors learned their craft in this "training company" with the 'wine-grower's spirit'). His legacy lives on.
- The Terroir
- Most of the vines face East or South, but some face North East. The altitude varies between 250 and 300 metres. At the foot of the hillside, clay and limestone soils are mixed with "chaillots" (silica residue of flintstone-encrusted limestone). These are loose soils, rich in potash and phosphoric acid. At the top, the brown or yellowish marl soils are dedicated to Chardonnay.

- Serve With
- Lively, light and cheerful, this is an ideal wine for sushi, which it will liven up while respecting their two-fold texture – crispy and soft. It marries well with fresh-water fish in a white sauce, or pasta and or risotto with seafood, which are complemented by its liveliness. It is also a great accompaniment for cheeses from the gruyere, blue and goat's cheese families. Serve at: 10 - 12 °C.
- CHARACTERISTICS OF THE WINE
- White gold and pale yellow in colour, it develops golden tints with age. The aromas of white flowers (hawthorn, acacia) open to notes of amber, honey, even spices, with time. To the palate, this is a mineral, harmonious and very pleasant wine.
